Cornbread: Muffin Tin (Yields 5-6, 2-1/2 inch muffins). You Will Need: 1/2 cup water; 1 large egg (or egg substitute); 1 cup Bloomfield Farms Gluten Free Cornbread & Muffin Mix. 1. Preheat oven to 400 degrees F. 2. Lightly grease muffin tin or spray with non-stick release agent. 3. Combine water and egg in a mixing bowl and whisk until smooth. 4. In a separate bowl place cornbread mix and slowly add liquid ingredients prepared in Step 3. 5. Gently hand mix with a spoon or spatula. (Do not over mix). 6. Spoon batter into muffin tin, making sure each tin is 3/4 full. Tap pan on counter to level muffin batter. 7. Place tin on middle rack in oven and bake at 400 degrees F for 15-20 minutes. 9 x 9 x 2 Square Pan: You Will Need: Contents of box or 3 cups Bloomfield Farms Gluten Free Cornbread & Muffin Mix, 1-1/2 cup water, 3 large eggs (or egg substitute). 1. Preheat oven to 400 degrees F. 2. Lightly grease 9 x 9 x 2 pan or spray with non-stick release agent. 3. Combine water and egg in a mixing bowl and whisk until smooth. 4. In a separate bowl place cornbread mix and slowly add liquid ingredients prepared in Step 3. Gently hand mix with a spoon or spatula. (Do not over mix). 5. Spoon batter into 9 x 9 x 2 pan. Tap pan on counter to level batter. 6. Place tin on middle rack in oven and bake at 400 degrees F for 25-30 minutes or until done. For 8-inch Round Pan, use 1 cup water, 2 large eggs and 2 cups mix. Bake at 400 degrees F for 20-25 minutes. Fried Cornbread: You Will Need: 1 cup Bloomfield Farms Gluten Free Cornbread & Muffin Mix, 1 egg (or egg substitute), 3/4 cup water. 1. Lightly oil skillet or griddle with corn oil and preheat to 375 degrees F (medium temperature). 2. Combine water and egg in a mixing bowl and whisk until smooth. 3. In a separate bowl place cornbread mix and slowly add liquid ingredients prepared in Step 3. 4. Gently hand mix with a spoon or spatula. (Do not over mix). 5. Using a large tablespoon or ladle place an amount in heated skillet and fry approximately 2 minutes per side or until done. Note: To prepare Fresh Corn Muffins, add to batter 1/4 cup of drained whole kernel corn for each cup of mix in recipes above; bake as directed. For Jalapeno Muffins, add to batter 1/4 cup drained chopped jalapenos for each cup of mix in recipe above; bake as directed.
