Cooking: To prepare as a rice alternative, rinse well. For 1 C Freekeh, add 1-1/2 C water (add additional 1/2 C water for softer result) and 1 tsp salt, bring to a boil, cover and simmer for 30 min. Fluff and serve. When using Freekeh in soup, do not rinse. Use 8 C water/broth for 1 C Freekeh plus 1 tsp salt. Bring to boil, reduce heat to low and cook uncovered for 60-90 min. Soup will thicken as it cooks.
