Coat both sides of fillet with seasoning. Put 1 tablespoon butter or oil (olive or vegetable oil) per fillet in large skillet over high heat. Add fillets immediately. Blacken on both sides, over high heat. Reduce heat and turn fillets over. Cook until done over medium heat.
