Vanilla Cupcakes: You will need from your pantry: 1/2 cup plus 2 tbsp cold water; 1/3 cup plus 3 tbsp vegetable oil; 3 whole eggs; 12 cupcake paper liners. Preheat oven to 350 degrees. Place Vanilla Cupcake mix into bowl. In separate bowl combine water and egg and mix with a fork for 15 seconds or until slightly foamy. Add oil and egg mixture to the dry mix. Mix until completely combined, no lumps (60 strokes by hand or 30 seconds on 1st speed of mixer). Divide equally between 12 paper-lined cupcake pans. Bake for 25-30 minutes on center rack. Makes about 12 cupcakes. Allow to cool completely before frosting.
