Note: Preheat oven to 350 degrees. Line cupcake pan with 8 paper liners. You Will Need: 1/3 cup milk; 5-1/3 tablespoons butter - melted and cooled; 1 egg; 8 cupcake pan with liners needed! 1. Cupcake: Pour mix into bowl of a stand mixer. Add egg, milk and melted butter. Beat until blended. Pour into prepared pan filling each well no more than 2/3rds full. Bake for 16-18 minutes, until cupcakes tests done with a toothpick. Cool in pan 10 minutes, then remove from pan and allow to cool on rack. 2. Frosting: Place frosting mix in a bowl with cream cheese. Beat until blended. If frosting is too thick you can add milk, a few drops at a time, and continue to beat on high until frosting is desired consistency. Spread on cooled cupcakes. Enjoy! 3 oz cream cheese, at room temperature.
