Cooking: Soak the noodles in 8 cups (4 pints/2 lt) of water, then boil for 4 minutes until noodles are tender yet firm. Rinse under cold water. In a saucepan heat broth over a medium flame, add tofu, mushrooms and vegetables, cooked for 2 minutes then slowly whisk in the egg. Separate a cup of broth and mix in the miso paste, stirring well. Add the prepared miso and the cooked noodles to the broth. Sprinkle on the onions and red pepper flakes just before serving. Serve hot. Store in cool, dry place. For expiry date see front panel.
