Substitute thin slices of polenta for pasta in your favorite lasagna recipe. Do the same with Southwestern ingredients (re-fried beans, green chili, and cheese) and create a tamale pie to remember. Refrigerate after opening. For soft polenta, heat desired amount in microwave, add small amount of liquid (water, milk, stock), and blend until you have a texture of mashed potatoes. Heat again and enjoy.
