All You Need: 1 tbsp. oil; 1 large onion, sliced thin; 1 medium red or green bell pepper, sliced; 1 lb. ground beef; 1/4 cup water; 8 fajita-size flour tortillas, warmed; assorted toppings. Makes 8 fajitas. 1. Heat oil in large skillet on medium-high heat. Add onion and bell pepper; cook and stir until tender. Remove from skillet. 2. Brown ground beef in same skillet on medium-high heat. Drain fat, if desired. 3. Stir in spices and seasonings and water. Bring to boil, stirring occasionally. Reduce heat to low; simmer 3 minutes, stirring occasionally. Return vegetables to skillet; cook until heated through. 4. Spoon beef mixture into warm tortillas. Serve with assorted toppings, if desired. Chicken or Steak Fajitas: Prepare as directed using 1 pound thinly sliced chicken or steak in place of the ground beef.
