Cooking: Melt 1 lb margarine or butter. Add 1 bag (1 lb) Etouffee Mix, stir until smooth and simmer for 5 minutes stirring often. Slowly add 3 quarts of water and stir until the mixture is dissolved. Add 2 lbs of crawfish tails or boiled peeled shrimp. Bring to a boil. Reduce heat; simmer for 15 minutes stirring occasionally. Yields: 1 gallon or 16 - 8 oz servings.
