Serving Suggestions: For a hearty salad, toss prepared Peruvian-Style Quinoa & Rice Mix with spicy peanut dressing. Stir in celery, red onion, granny smith apples, and cubed, cooked chicken. Chill and garnish with chopped peanuts. Serve with grilled fish or pulled pork. 1: In a medium saucepan combine 1-3/4 cups of water, rice, contents of seasoning pouch, and 1 tsp of olive oil (optional). Stir well and bring to a boil. 2: Cover and reduce heat to low. Do not lift lid while cooking. Simmer for 28 minutes. 3: Remove from heat. Let stand covered for 5 minutes. Fluff with fork and serve. 4: Soak up the compliments.
