Just naturally delicious cookies fresh from the oven. Sweet! Ancient Grains: When you're making an organic baking mix that rivals homemade, only the best all-natural ingredients will do. That's why we don't use just any old grain in our baking mixes. We hunted and gathered and selected the most delectable organic ancient grains to complement our mixes, going to the ends of the earth and the beginning of time for these baking delights. (Full disclosure: we didn't do any time travel, but we did taste and test ancient grains that have been preserved through the ages.) Ancient grains have been a diet staple for thousands of years with good reason: They are rich in nutrients, less chewy than other whole grains and have less gluten than modern wheat flour. What's not to love?! We would like to introduce you to our new (ancient) favorites: Kamut - Believed to be of Egyptian origin, this ancient grain is higher in protein than many other whole grains. And it's a good source of selenium, zinc, magnesium, and iron. Spelt - A prehistoric ancestor of modern wheat, spelt is an excellent source of manganese and a good source of fiber, vitamin B3, and protein. What You Need: 1/2 cup (softened) butter, 1 (well beaten) egg. Baking: 1. Preheat oven to 325 degrees F. 2. Add cookie mix to medium mixing bowl. Add softened butter and combine/mix well with fork. 3. Add beaten egg and mix well. 4. Form dough into 1-1/2 inch balls and place onto ungreased baking sheet. Bake for approximately 9-10 minutes or until golden brown. Makes two dozen cookies. Try These Variations: Oatmeal kinda person? Add 1/2 cup old-fashioned oats to cookie mix before adding butter. Proceed as directed. Feel like a cookie cake? Spread cookie dough into greased 9 inch x 9 inch baking pan. Bake at 350 degrees for 20 minutes or until golden brown. Cool in pan before cutting into squares. Makes 16 cookie bars.
