Simply add: 1 tbsp canola or vegetable oil; 1-1/2 lb chicken thighs, cut into 1 inch cubes; 2 medium potatoes, quartered; 1 medium onion, peeled, cut into large chunks. Serving Suggestion: serve with steamed rice. Step 1: In a medium saucepan, heat oil over medium heat. Add Massaman Curry Paste and cook, stirring, for about a minute until it starts to smell yummy. Add chicken and cook for 3 minutes until chicken starts to change color. Step 2: Now's the time to pour in the creamy coconut milk and 1/2 cup of water. Step 3: Stir through the dried herbs & chilies (Spice it how you like! Leave out the dried chili for a mild curry. If you like it hot, chop up the dried chili before you add it). Step 4: Add in the peanuts, potatoes and onion. Reduce heat to medium-low, cover and simmer for 30 minutes. Remove lid and simmer for another 10 minutes until the sauce thickens. Enjoy!
