What You Need: 1 pound thawed fish fillets; optional: 1 egg, beaten or 1/4 cup milk; cooking oil; 1/4 cup Miracle Fry seasoned fish breading. 1 pack of Miracle Fry seasoned fish breading coats about 6-7 lbs of fish. Use 5 eggs, beaten or 1-1/4 cups of milk, when using the entire pack. For Pan Frying: 1. Cut fillets into 4-inch pieces and pat dry. 2. Pour oil into a large skillet. Oil should cover fish about half way. Heat oil to 350 degrees F. 3. Place dry batter mix and eggs or milk into separate shallow bowls. 4. For best results, moisten fillets in egg or milk, and immediately dredge in breading, pressing to coat both sides thoroughly. Carefully place in preheated oil. 5. Fry each side for about 2-3 minutes, or until golden brown, turning once. Fish is done when it flakes easily with a fork. 6. Remove fillets from oil and drain on paper towels. For Deep Frying: To deep fry fish, pour oil into a deep fryer or a large Dutch oven to a depth that allows the fish to float while cooking. Deep fryer or Dutch oven should be no more than 1/3 full of oil. Heat oil to 375 degrees F. Prepare fish as instructed above and fry for 3-5 minutes, or until golden brown. Drain. Enjoy!
