You Will Need: 3/4 lb. ground beef, turkey or Italian sausage; 3/4 cup chopped green pepper; 1/2 cup chopped onion; one 14 oz. can diced tomatoes; one 8 oz. can tomato sauce. Cooking for Taco Pasta Dinner: Step 1: Add pasta to boiling, salted water. Cook for 7-10 minutes or until desired tenderness (do not overcook). Drain and rinse with cool water. Step 2: In a large skillet over medium heat cook meat, onions. peppers and a pinch or two of seasoning packet until meat is cooked through. (If you are using very lean meat, you may need to add a tablespoon or two of oil to the pan.) Step 3: Add tomatoes and juice, tomato sauce and 1/2 can (about 1/4 cup) of water to skillet. Add remainder of seasoning packet to taste. Cook for 1-2 minutes until sauce is warmed through. Fold in pasta and cook 2-3 minutes more. Makes 4 generous servings. You can add any number of things in Step 3 to make a new creation every time. Try adding black beans, corn, cilantro, black olives, red peppers. salsa, and top with a dollop of sour cream! Quick & Easy Side Dish: Boil pasta as directed in Step 1. Drain and rinse with cool water. Set aside.; Heat 3 tablespoons olive oil (more or less to taste) in pan. Add contents of seasoning packet (to taste) and drained pasta. Toss and voila!
