1. Combine contents of falafel mix with 1-1/4 cups water. Let stand 10 minutes (If mixture stands too long, patties will be difficult to form and may break apart). 2. Quickly form falafel mixture into 12 patties, each 2 inches in diameter and 1/2-inch thick. 3. In large 10-inch skillet, heat 1/3 cup olive oil or vegetable oil over medium heat 3 to 5 minutes. 4. Cook patties about 4 minutes on each side, or until evenly golden brown and crisp. Serve with Cucumber Yogurt Sauce, below. See serving ideas on side of box. Makes 12 patties.
