Pamela's Spice Cake: 1 bag Spice Cake Mix; 1/2 cup butter, melted; 3 eggs, large; 1 cup milk. Yield: Two 8 inch rounds, one 9 inch square, or 18 cupcakes. Allergen Options: For butter, use equivalent butter alternative, melted, or oil. For milk alternative or 3/4 cup carbonated water. Use of optional ingredients may change baking times. Reduce baking time by 10 minutes, check and test until toothpick comes out with slight crumbs. Baking: Preheat oven to 350 degrees F. Whisk eggs, butter, and milk together. Add dry mix and beat together for 2 minutes on medium with mixer or by hand. Pour batter into greased pan or lined cupcake pan. Bake following time chart below or until toothpick comes out with slight crumbs. Cool for 5 minutes, then remove from pan and cool completely on cooling rack. Pan Size/Suggested Baking Times: Two 8 inch Rounds: 25 to 28 minutes; Yield: Two 1-1/2 inch tall layers. One 9 inch Square: 35 to 40 minutes; Yield: One 2 inch high square cake. Cupcakes - Fill 3/4 Full: 20 to 24 minutes; Yield: 18 cupcakes. Serving Suggestions: When cooled, frost cake with vanilla or cream cheese frosting made with Pamela's Vanilla Frosting Mix, or dust with powdered sugar.
