What You Need: 1/2 cup milk (whole or soy), 1/4 cup oil, 2 eggs. Cooking: 1. Heat oven to 350 degrees F. Grease bottom 5 x 9 inch loaf pan. Spray with nonstick cooking spray or grease and dust pan with plain breadcrumbs for easier cake removal after baking. 2. Combine Sweet Potato Pound cake mix, oil, milk and eggs in a large bowl. Beat with a utensil until mixture is smooth. Pour into greased pan. 3. Bake at 350 degrees F for 45 min. Oven temperatures may vary. Insert toothpick in center until it comes out clean. More Moisture: Try combining oil, milk and mix together and allow to stand for 15-20 minutes. Then add eggs. More Vitamins: Try adding an extra 1/4 cup of grated sweet potato to combined mix (mix egg, oil and milk) or add to a medium baked sweet potato or 6 ounces of canned sweet potato. Cooling: Allow to thoroughly cool. Loosen sides and bottom carefully before removing from loaf pan.
