Cooking: Soak in cold water overnight. Rinse thoroughly. In a saucepan, boil 1-1/2 cups water. Add 1/2 cup flageolets and 1 tsp salt to the water and simmer slowly until water is absorbed (about 1 hour). Makes 3-4 servings.
