Beef Enchiladas (Makes 8 Enchiladas): 1 - 1.5 oz pkg La Preferida Enchilada Sauce Mix; 1 - 6 oz can tomato paste; 2 cups water; 1 lb ground beef; 2 cups shredded cheddar cheese; 1 pkg 6 inch flour tortillas. To Make Enchilada Sauce: In saucepan mix enchilada sauce mix, tomato paste and water. Heat to boil. Reduce heat and simmer 15 minutes, stirring occasionally. To Make Enchiladas: In meantime brown beef in skillet and drain. Stir half each of sauce and cheese into beef. With tongs, dip tortillas into remaining sauce. Place 1/4 cup beef mixture on each tortilla and roll tightly; place seam-side down in 7x11 baking dish. Top with remaining sauce and cheese. Bake 20 minutes at 350 degrees F.
