You Will Need: 2 medium all-purpose potatoes, peeled and cut into 1/2-inch cubes (about 3 cups); 1 tbsp. oil; 1 medium onion, finely chopped; 1 green chile pepper, such as serrano, seeded and finely chopped (optional); 1 pkg. Saag Aloo seasoning Mix; 1 lb. baby spinach leaves; 1/2 cup light or heavy cream. Prep Time: 10 minutes. Cook Time: 30 minutes. 1. Place potatoes in medium saucepan. Cook with water. Bring to boil. Reduce heat to low; cover and simmer 8 to 10 minutes or until potatoes are fork tender. Drain potatoes. Set aside. 2. Heat oil in large skillet on medium heat. Add onion, chile and Seasoning Mix; cook and stir 3 minutes or until translucent. Add spinach in batches; cook and stir 2 minutes after each addition until spinach is fully wilted. 3. Stir in potatoes and cream until well blended. Bring to boil. Reduce heat to low; simmer 10 minutes, stirring occasionally. Makes 8 servings.
