What You Need: 2 lbs. beef (chuck, flank, round or top sirloin steak); cut into thin strips; 1/3 cup sugar, 2 tbsp soy sauce, 1/3 cup water; 1/3 cup + 1 tbsp cornstarch; divided; 3-4 tbsp oil; 1 medium onion; cut in wedges; 1 small red or green bell pepper; cut in chunks. Preparations: 1. Blend seasoning, sugar, soy sauce, 1 tbsp cornstarch and water; set aside. 2. Coat beef with 1/3 cup cornstarch. 3. Heat oil in large skillet or wok and brown meat (meat can be divided and browned in two parts if skillet is too small). 4. Add vegetables and cook until tender. 5. Add seasoning mixture and stir-fry until thickened. Makes 5 servings, about 1 cup each as prepared above.
