What You Need: 1 lb. boneless, skinless chicken, cut in bite-size pieces; 1 tbsp sugar (reduced 2 tsp if desired); 1/3 cup water; 2 tbsp oil; 4 green onions, 3 celery stalks, 1/2 red or green bell pepper, 4 carrots, 4 mushrooms; sliced; 1 can (8 oz.) bamboo shoots, drained; 1/2 cup unsalted cashews (optional). Preparations: 1. Combine seasoning, sugar and water. 2. Heat oil in skillet or wok; stir-fry chicken. 3. Add vegetables except mushrooms and bamboo shoots; stir-fry until tender. 4. Add remaining vegetables; stir-fry. 5. Add seasoning mixture; stir-fry 1 minute. 6. Mix in cashews as desired. Makes 5 servings, about 1 cup each as prepared above.
