How to use in your recipes: Cakes, crusts, pancakes: use 1-1/8 cups of the pastry flour to replace each 1 cup of gluten flour. Cookies, muffins and quick breads; use 1-1/4 cups of the pastry flour to replace each 1 cup of gluten flour. You will need to add xanthan gum to the recipe when you use this flour. How to add xanthan gum to your recipes: Cakes: add 3/4 tsp per cup of flour. Crusts: add 1/4 tsp per cup of flour. Quick breads: add 3/4 tsp per cup of flour. Cookies: add 1/2 tsp per cup of flour. Pancakes/Waffles: add 1/2 tsp per cup of flour. Store in airtight container after opening. Do not refrigerate.
