You Will Need: 1 packet White Bean & Chicken Chili Organic Seasoning Mix; 1 tbsp. vegetable or olive oil; 1 lb. boneless, skinless chicken, cut into 1 inch cubes; 1 large onion, diced; 1 green bell pepper, diced; 1 (15 oz.) can white beans, not drained; 1 cup water. 1. Heat oil in a large saute or sauce pan over medium-high heat. 2. Add chicken, onion and bell pepper, sauteing until chicken is no longer pink. 3. Add seasoning mix, beans and water to pan; bring to a boil. Reduce heat and simmer about 15 minutes, stirring occasionally until thickened as desired. Suggestions: Substitute poblano, Anaheim or other green chillies for bell pepper. Add a can of corn (drained) and 1/2 cup sour cream after step 3 and cook an additional 5 minutes.
