Single Batch Recipe: 1 acorn or butternut squash; 3 tbsp olive oil; 1 tbsp butter (melted); 1 tbsp seasoning. Preheat oven to 350 degrees F. Cut squash in half lengthwise, remove seeds, then cut into half-moon slices about 1/2 inch thick. Place in a single layer on a rimmed cookie sheet. Mix together melted butter, olive oil and 1 tbsp of seasoning. Drizzle over squash slices and toss to coat all sides. Roast for 25 minutes or until tender, turning halfway through. Try this recipe with potatoes and other root veggies too!
