Stove Top: 1. In a large saucepan with tight fitting lid, bring 2-1/2 cups (20 oz) of water to a boil. If adding meat, add at this time. Add 2 tablespoons of butter (optional) then 1 package of Vigo Jambalaya Cajun Rice Mix, stirring while boiling for 1 minute. 3. Cover saucepan tightly. Reduce heat to simmer, and allow to cook undisturbed for 22-25 minutes. Remove from heat and let stand uncovered for 5 minutes. Fluff and serve. Microwave: Combine contents of this package, 2-3/4 cups hot tap water and 2 tbsp butter or margarine (optional) in a 1-1/2 quart casserole dish.
