To add real smokehouse flavor to your gas or electric grill cooking, place 3-4 handfuls of dry chips in a metal smoker tray or make your own smoker pouch. You can make a smoker pouch using aluminum foil. Place chips on a sheet of heavy duty aluminum foil and fold into a pouch. Puncture the top of pouch in several places with BBQ fork or other sharp pointed tool. Place foil pouch or Smoking Chip Tray on cooking grid over heat. When the chips begin smoking, use tongs to move the pouch or tray to the side of grill leaving plenty of room for cooking. Remember - it's the smoke that delivers the flavor! You won't get that real smokehouse flavor until the chips start to smoke. For charcoal grills, place the pouch on the cooking grid over hot coals. Tips and Techniques: To accelerate the smoking process on your gas or electric grill, turn temperature to high when you first place chip pouch or tray on cooking grid. Within a few minutes chips will begin to smoke, then turn temperature to desired cooking level. To prevent grease flare-ups, cook food on heavy duty aluminum foil. If chips flame up on your gas grill, use spray bottle of water to douse flames. This tip does not pertain to electric grills.
