Easy Stove Top: 1. In a 2-1/2 quart saucepan, combine 2-1/2 cups water, 2 tbsp tomato paste, 2 tbsp butter or margarine and Zatarain's Etouffee Base. Stir thoroughly to dissolve lumps. 2. Bring to boil, reduce heat, cover and simmer over low heat for 10 minutes. 3. Add 1 pound peeled shrimp (crab meat or crawfish tails can be substituted), stir, and return to boil. 4. Reduce heat, cover and simmer over low heat for 10-15 minutes. 5. Serve over a bed of steamed rice. Microwave: 1. In a 3 quart microwave-safe casserole dish, combine 2-1/2 cups water, 2 tbsp tomato paste and Zatarain's Etouffee Base. Stir thoroughly to dissolve lumps. 2. Cover and cook on high for 10-12 minutes, stirring after 5 minutes and again at 10 minutes. 3. Add 1 pound of seafood, stir, cover and cook on low for 15 minutes (Cook time may differ depending on the power of the microwave oven), stirring after 10 minutes. 4. Serve over a bed of steamed rice.
