Makes: 14-15 2 inch cookies. In addition to mix, you will need: 1/8 c unsweetened applesauce, 3 T grapeseed oil (or coconut oil), 1/2 T pure vanilla extract. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. In a stand-up mixer fitted with a paddle attachment, combine the applesauce, oil and vanilla. Add in mix. Form 2 inch balls and place on cookie sheet. Using your palm, lightly press down on the cookies. Bake 12-14 minutes. Cool on cookie sheet for 10 minutes and transfer to cooling rack. Store leftovers in container with tight fitting lid, if you have any! Non-Vegan Version: 1/4 c oil (or 1/4 cup butter), 1 egg, 1/2 T pure vanilla extract. Follow directions above.
