Zemas Gluten-Free Peruvian Sweet Potato Pancakes: Makes: (12-14) 4 inch pancakes. In addition to mix, you will need: 1 egg (or egg replacer), 1-1/2 c. almond milk (or milk of your choice), 4 T. pure maple syrup, 1 T. olive oil (grapeseed or coconut), 1 t. pure vanilla extract. Heat griddle over medium heat. Spray with non-stick spray. Whisk together all wet ingredients. Add entire mix. Ladle 1/4 cup batter onto hot griddle. Cook 2-3 minutes on first side, or until you see bubbles on top. Flip and cook another 2-3 minutes. Zemas Gluten-Free Peruvian Sweet Potato Waffles: Makes: (7-8) 6 inch squares waffles. Same as above, but reduce milk of choice to 1-1/3 c. Use waffle maker as directed. Zemas Gluten-Free Harvest Muffins: Makes: 14 large muffins. In addition to mix, you will need: 1/4 t. xanthan gum, 3/4 c. coconut milk (or milk of choice), 2 eggs (or egg replacer), 1/2 c. pure maple syrup, 1/3 c. coconut oil (or oil of choice), 1 (15 oz.) can pumpkin puree, 1 T. pure vanilla extract, 1/2 c. chopped Calimyrna figs, 1/2 c. hazelnuts chopped (toasted) (optional), 1-1/2 cups fresh or frozen cranberries. To toast hazelnuts, place them on a cookie sheet and place in a 400 degree oven for 8-10 minutes. Let cool. Turn oven down to 350 degrees. Grease muffin pans. In a bowl, combine mix and xanthan gum; set aside. In another bowl, whisk all liquid ingredients. Add dry mix to wet mixture and combine. Add in chopped ingredients; mix well. Fill muffin cups 3/4 of the way. Bake for 28 minutes. Check doneness with a toothpick. Cool for 10 minutes in pan, then take muffins out to cool on rack. Freezes well.
